Ribboned Cheese Paste Sandwiches

Sometimes simplicity is all you need to knock it out the park. These ribboned cheese paste sandwiches are the perfect example. Easy peasy but suitable for both children and adult parties. Stick with classic yellow, or customize to match your favourite colour or party theme.

What is cheese paste you ask? Cheese paste is a seasoned cheese spread. When plastered onto sandwich loaf it creates the most delectable little sandwiches. These sandwiches are very popular in the West Indies at picnics, tea parties and for kids lunch boxes.

For these sandwiches I used my mum’s ‘nocipe’. No that wasn’t a typo. My mum’s style of cooking can’t be categorized as recipes. She learned to cook the “old school” way. That was when cooking was a finely tuned skill with little regard for measuring utensils.

An inconvenience to the rest of us eager to learn, but an invaluable skill to have in her arsenal. Her ability to estimate, taste and recognize textures and flavours honed her prowess in the kitchen. She can spot if there’s too much water for the bubbling pot of rice and pivot to correct a bland pot of stew. Her reality is that recipes are used for ideas rather than regimented step-by-steps.

Sadly, or not so sadly, I’ve also learned this inexact method of cooking much to my hubbie’s chagrin. Unless baking cakes, breads or delicate pastries where exactness is key, I measure nothing.

All that to say, I’ve made cheese paste for many years and it never crossed my mind to jot down the recipe – until this post. So here is my version, enjoy!

Ingredients
 2 cups old fort cheddar cheese
 3 tbsp melted butter (unsalted)
 2 tsp grated sweet onion
 2 tsp worcestershire sauce
 1 tsp yellow mustard
 ¼ tsp seasoned salt
  tsp white pepper
 2 tbsp grated celery
 ½ tsp pepper sauce (optional)
 food colouring

Combine cheese, butter, onion, worcestershire sauce, mustard, seasoned salt, pepper sauce, white pepper into a food processor and blend on low until combined.

Add grated celery and pulse until just combined.

Determine how many colours you wish to make and separate cheese paste into equal portions for each colour.

Add desired food colouring to each portion and mix until well combined.

Spread cheese paste onto bread slices and stack and trim to desired height and shape.
